Quinoa

Has anyone tried Quinoa? It's really great! It's a "pseudocereal" that can be substituted for rice, wheat, and such based products (quinoa pastas taste really good).
Nutritional value:
- high complete protein (includes all essential amino acids)
- well balanced amino acid profile (vegans!)
- contains amino acid lysine -- tissue growth and repair
- good source of manganese, magnesium, iron, copper, phsophorous
Health problems that can be helped!:
- above mentioned minerals help headaches, diabetes, atherosclerosis

this looks awesome! i've recently cut our white rice, white bread, etc... trying to reduce my carb intake or at least get my carbs from better sources and it looks like this fits the bill!
have you actually tasted this stuff? is it really good? how did you prepare it? are there any tips/secrets to preparing it? does it mix well with particular foods, but not others?

I've eaten quinoa in various foods, and it's really good!! You can buy quinoa pastas that are taste good, but you can also just buy quinoa seeds and cook them yourself. You cook it just like you would rice, but with less water. I usually cook rice with a water:rice ratio of 2:1, and would cook quinoa with a water:quinoa ratio of maybe 1.5:1. You cook it like rice, but it definitely tastes different. It has a kind of spongy feel, but it is good, I promise! I made it the other day with a stir-fry tofu dish and it was delicious.
I just tried quinoa tonight for dinner. it was really good! I cooked it in an organic vegetable broth, and then added the cooked quinoa to sauteed onions, garlic flavored tofu, tomato and red pepper. It was delicious! Thanks for the tip, I never would have tried this otherwise.
I just picked up some red quinoa today and whipped up some thing with broccoli and beans (guess where I got that!!).. tasted yumm...

especially white rice, brown rice or long grain rice is another story....but quinoa is super healthy and has pretty much the same consistency as rice, so why no make the change!?
