Slow Cooker Stuffed Peppers
1 lb. extra lean ground beef
1 tsp. garlic powder
1 tsp. onion powder
2 c. instant rice
2 c. V-8 juice
4 large green bell peppers, cored and seeded
2 14 oz cans Italian diced tomatoes
Spray inside of slow cooker with nonstick spray. Combine ground beef, garlic powder, onion powder, rice, and vegetable juice in a medium bowl and mix well. Stuff mixture into cored bell peppers. Arrange bell peppers in slow cooker. Spoon tomatoes on top of and around peppers. Cover and cook on low heat for 8 – 9 hours or on high heat for 4 – 5 hours. To serve, cut peppers in half and spoon tomatoes over the top. Serves 4.
