Veggie wraps - great for a picnic

We recently went on a picnic and I found that these easy to make veggie wraps worked well!  They were quite refreshing.

Ingredients

  • Whole Wheat Tortillas
  • Firm Organic Tofu
  • Balsamic Vinaigrette
  • Thinly sliced Red Pepper
  • Shredded Carrots
  • Fresh Spinach Leaves
  • Grape Tomatoes

  I cut the tofu into small cubes and marinated it in the balsamic vinagrette the night before I needed the wraps.  Then the next day I put a handful of spinach followed by the tofu, red pepper, carrots and a few grape tomatoes in the tortilla and rolled it.  Wrap each one individually in aluminum foil for easy transport to your picnic destination!

(Try to find tortillas without preservatives if you can.  I was disappointed to find that in my local grocery store they all had preservatives.  But I found a whole wheat tortilla from Trader Jo's w/o preservatives.  It also rolled well and didnt tear.  My experience with 365 Whole Wheat tortillas is that they always rip when i try to make wraps/burittos.)
